Comprised of coffee from many small producers in northern Oaxaca, this offering is a glowing example of how good coffee from Mexico can be. Old varieties are sorted and combined by cup score to produce a pristine and complex coffee. The cup opens with light rosewater and clover honey and only deepens to maple syrup and plum. A touch of eucalyptus is also perceptible in a cup that unfolds in stages and maintains impeccable clarity throughout. A well-brewed cup of this will make most people rethink their notions of Mexican coffee.
